Our ceramic knives are made from ZrO2 - zirconium dioxide ( also known as Zirconia) , forged under 300 tons of pressure and a temperature of 1400? C, the result is a pure, dense, unrelenting material that is 50% harder than steel and second only to diamond in hardness. It rates 8.5 to 10 on Moh' s scaleof hardness, while the highest quality metal knives rate 6 to 7. Our knives stay sharp for years without need for sharpening.
