Za' atar ( zaatar, za' tar, zatar, zatr, zahatar, zaktar or satar) is generally prepared using ground dried thyme ( such as thymus capitatus, Thymbra spicata, Thymus vulgaris ( Thyme ) It is mixed with toasted sesame seeds, salt, and other spices ( Mixed of aramaic spices that gives tasty flavor .)
Types Of Za' ater :
1- West Bank Zater ( Palestinian Zater) , Content : Dried ground Thyme ( type : thymus capitatus) from holy land, toasted sesame seeds, and vegetable oil
2- Za' atar Baladi, type 1, Content : dried thyme, toasted sesame seeds, vegetable oil, sumac and spices
3- Za' atar Blaldi, type 2, Content : dried thyme, toasted sesame seeds, sumac and spices
4- Za' atar Mawani ( For Bakeries) , Content : dried thyme, toasted sesame seeds, vegetable oil, sumac and spices
5- Extra Za' atar ( Excellent Mawani) , Content : dried thyme, toasted sesame seeds, vegetable oil, sumac and spices
6- DokKa ( Alebo Za' atar) : Ground Spices, ground wheat, sault, citric acid, vegetable oil, and hot cayenne or chili ( Shatta) .
