But the king oyster mushroom ( or king trumpet or eryngii) is commanding more respect and interest from cooks these days.
You won' t confuse the plump king oyster ( Pleurotus eryngii) with its siblings in the oyster mushroom family. It boasts a sturdy stem, smallish cap and longer shelf life than many of its fellow fungi. The density of that stem? It will need a bit more cooking than, say, a button mushroom.
