Sweet potato red color is prepared by extraction from Sweet potato of NO. 1 purple blue potato ,which is a type of new variety integrating with nutrition ,health care and pigment and cultivated by ¡°natural mutation¡± taking use of purple sweet potato from Japan. This pigment is natural edible and grease-unsoluble red color with pigment content of 3.04% and colorful color , and its physical and chemical stability exceeds other pigments in addition to stronger light stability and strong colorant as well as natural non-public pollution .The pigment includes procyanidins and total flavone which could resist oxidation , eliminate active oxygen and improve body immunity , at the same time , it has auxiliary function to prevent and cure tumour and contains many ingredients including calcium ,phosphorus , iron and vitamin A, B1, B2, C etc, so it has higher nutrient and medical value . Due to NO. 1 purple blue potato with merits of nature , nutrition , health care and safe , it has been attached more importance widely by people and become important additive and colorant of food instead of chemosynthesis pigment , so it is popular in the country and has been sold to foreign countries successively at present.
