Properties: White crystals with strong sulphur dioxide smell, soluble in water, In aqueous solution, it is in the form of potassium bisulfite ( KHSO3) , which exerts a strong reducing effect. Solutions of this nature are rapidly oxidized on standing in air.

Application: Mainly used in foodstuffs industry as a preservative , for the treatment of wine after fermentation has ended. for the removal of moulds from freshly selected grapes before pressing. also used in pharmaceutic materials, photochem, bleaching, etc.
