    MAIN FUNCTION AND PURPOSE Aspartame is a new-style intense sweetener of amino acid. It is a dipeptide compound made from L-aspartic acid and L-phenylalanine. It has no after taste such as bitter, chemical and metal taste. Aspartame can enhance the flavor of fruit and reduce the bitterness of coffee. Furthermore, aspartame can decrease calories effectively, and it will not cause decayed tooth. Aspartame has the same metabolic function as protein.
    Aspartame has many advantages such as good flavor, intense sweetness, low calories and high safety. It is widely used in carbonated beverage, jam, instant coffee, frozen milk products, chewing gum, sweetmeat, salad dressing. Aspartame also can be made into different forms, such as granule, troche, powder or liquor.??and added as the substitution of saccharose into normal sweetmeats which adapt to diabetes and adiposis sufferers.

    MAIN FUNCTION AND PURPOSE L(+)-Tartaric acid is widely used as acidulant in beverage, and other foods, such as soft drinks, wine, candy, bread and some colloidal sweetmeats. With its optical activity, L(+)-Tartaric acid is used as chemical resolving agent to resolve DL-amino-butanol, an intermediate for antitubercular drug. And it is used as chiral pool to synthesize tartrate derivatives. With its acidity, it is used as catalyst in the resin finishing of polyester fabric or pH value regulator in oryzanol production. With its complexation, L(+)-Tartaric acid is used in electroplating, sulfur removal and acid pickling. It is also used as complexing agent, screening agent or chelating agent in chemical analysis and pharmaceutical inspection, or as resist agent in dyeing. With its reduction, it is used as reductive agent in manufacturing mirror chemically or imaging agent in photography. It can also complex with metal ion and can be used as cleaning agent or polishing agent of metal surface.

    MAIN FUNCTION AND PURPOSE D(-)-tartaric acid is an important chiral pool of 4 carbon atoms. With the rapid development of chiral pharmaceuticals, chiral additives and chiral auxiliaries, D(-)-tartaric acid is more and more widely used in pharmaceuticals and food industry. It is also used as chiral pool or resolving agent for chiral synthesis.
    When D(-)-tartaric acid or its derivatives is used to resolve amino acid, it has some advantages such as high reaction speed, high resolution ratio, and during the period of resolution, the dynamic process can be controlled and can oblige the amino acid to transform to the target configuration. So the yield always reaches 80%. Furthermore, D(-)-tartaric acid is easy to retrieve after resolution. The optical purity of the product is high and e.e% value can reach 99.9%.
    In addition, D(-)-tartaric acid has also been widely used in synthesizing and manufacturing many kinds of chiral food additives including the resolution of a new functional nutriment -- L-carnitine, and some chiral pharmaceuticals.
