Lactose is a disaccharide that is in the milk of the mammals. The lactose is not a sweet sugar and is slightly soluble. The lactase (B-D-galactosidase) hydrolyzes lactose in glucose and galactose. These sugars are relatively sweet (80 % of sweetness comparing with the saccharose) and they are 3-4 times more soluble than the alone lactose.
