It is a kind of natural edible pigment extracted from blueberry fruit. It contains anthocyanins and flavones. The amaranthine color powder is soluble in water, alcohol, but insoluble in oil. The environment PH value can influence its hue and stability. At PH below 5.4, the color is stable purple; At PH 5.4-6.4, it is unstable purple: At PH around 7.0, it is stable violet; At PH above 7.4, it is stable blue violet. It can be used in the coloring of wine, carbonic acid drinks, juice drink, cake.
